The name speaks for itself. This thread is dedicated to one of our most favorite subjects other than you know what  :fp So, if you have something to share, your favorite recipes, or what a wonderful meal you had last night..here is your new kitchen away from home :)

Being essentially a vegetarian, I'm always looking for new and tasty meals. I do eat some seafood, but not a lot. I love this and I'm sure many of you will to :D

Rocket, Olive and Pancetta Crumb Salad

Preparation time: 10 min
Cooking time: 5 min

Serves: 4 people
Ingredients

    1/2 cup Always Fresh Pitted Kalamata Olives
    1/2 cup Always Fresh Pitted Sicilian Olives
    2 tbsp Always Fresh French Capers
    3 tbsp Always Fresh Extra Virgin Olive Oil
    100g baby spinach leaves
    50g rocket leaves
    50g shaved parmesan cheese
    100g sourdough breadcrumbs, roughly chopped
    50g pancetta or bacon, finely diced
    1 tsp thyme leaves
    Finely grated rind of 1 lemon
    Juice of 1 lemon
    1/2 cup flat leaf parsley, roughly chopped
    1/2 cup chives, chopped
    2 garlic cloves, finely chopped
    Salt and freshly ground black pepper

Method

To make the Pancetta crumbs start with a fry pan on a medium heat with the olive oil. Add breadcrumbs and pancetta. Cook until just starting to change colour

Add thyme, parsley, chives and cloves with the lemon and garlic and cook until crumbs are golden and crisp

Take the pan off heat and use paper towel to drain any excess oil from the crumbs. Season with salt and pepper to taste

To make the salad, mix the olives, capers, spinach and rocket leaves in a large bowl

Transfer to a serving platter and top with shaved parmesan and the crispy crumbs.

This is probably the only time I ever eat any meat  :lol: tiny little bits of pancetta :D

The most delicious Fish and Chips recipe' I have ever used. Just for you sweetheart :)

Serves four adults

Ingredients

    Vegetable oil, for deep-frying
    150g (1 cup) self-raising flour
    75g (½ cup)cornflour
    75g (½ cup)custard powder
    ½ teaspoon bicarbonate soda
    Pinch salt
    330ml bottle beer
    1/3 cup (50g) plain flour, for dusting
    4 large skinless flathead fillets (overseas, use a white flesh fish like cod)
    Sea salt flakes, to taste
    Hot chips, lemon wedges, tartare sauce to serve

Half fill a large saucepan or deep fryer with oil, and heat to 180C.

 Combine self-raising flour, cornflour, custard powder, bicarbonate soda and salt in a bowl. Make a well in the centre. Gradually pour in beer, whisking constantly, incorporating flour from the edges of the bowl until smooth and of pouring consistency. Set aside to rest for 30 minutes.

 Place flour in a large bowl. Dust fish, shaking off any excess, then coat well in batter.

 In batches, carefully and slowly lower fish into oil. Cook for 3-4 minutes, turning halfway, until fish is crisp, golden and just cooked through. Remove from oil, and drain well on paper towel. Season with salt.

 Serve fish with chips, lemon wedges, and tartare sauce.

For the potato chips, I cut them into roughly half inch thick, par boil them, drain and dry and place them in the fridge for two hours; then deep fry them at 130C until they look dry but not coloured. Remove and dry on paper towel and let them cool for an hour or so. Finally heat your oil again to 180C and cook until golden. Remove, drain them and sprinkle with sea salt.

It looks like I'm the only one who eats around here  ::) Nevertheless I would like to share this with you. I know we all love ice cream and many of us have either a dairy intolerance these days, or simply watching our waist lines. So here is what I love to make for the family.

Rhubarb Ice Cream (Vegan)

3 cups coconut milk (full fat coconut milk or make your own coconut milk)
1 cup rhubarb syrup (recipe below)
1 cup rhubarb pulp (byproduct of making rhubarb syrup)
1 teaspoon vanilla
2 teaspoon tapioca flour/starch
2 teaspoons beet juice (optional - to add color - I promise it won't taste at all like beets)

Simmer the 3 cups of coconut milk in a large saucepan over medium heat.  Add 1 cup of rhubarb syrup and 1 cup of rhubarb pulp and gently whisk to combine.  Allow the milk to simmer for 2-3 minutes while gently whisking and then remove the pan from the heat.  Whisk in the vanilla, tapioca flour and beet juice.  Transfer the mixture into a glass bowl and place in the refrigerator to cool for at least 4-6 hours. (You can cover the bowl once the mixture cools down a bit).  At this point you need to process the mixture in your ice cream maker according to the manufactures instructions or until you know it is ready (mine took two batches at 15 minutes each).  Transfer the "soft" ice cream to a container and freeze until the ice cream is set.

Rhubarb Syrup

2 lbs of rhubarb, chopped
1 cup of water
Sugar

    Simmer the chopped rhubarb in 1 cup of water over medium heat for about 20 minutes or until all the rhubarb is disintegrated.  Stir occasionally to make sure the bottom doesn't burn.  Transfer the hot rhubarb into a jelly bag or cheesecloth over a bowl and hang it up to allow the juice to strain overnight.  (This is the perfect time to chill the base of your ice cream maker).
    In the morning take the juice and place it back into a saucepan over medium heat. (I got 2 cups of juice).  Reserve the rhubarb pulp that is left in the cheesecloth for making the ice cream.  Add 1 cup of sugar to every 2 cups of rhubarb juice and stir until the sugar is all dissolved.  Bring the mixture to a boil and then remove it from the heat to cool.  The rhubarb ice cream will take 1 cup of the finished syrup.  Store the remaining cup in the refrigerator for other purposes.   

Though this is high in energy with the sugar, it is a treat and is something you shouldn't get addicted to  :lol:

Stuffed Toad and Dragon Eyes :D

Stuffed Toad ingredients:
1/2 pound of ground burger (venison's my fave)
small potato (any kind-I like red skins or yukons)
a veggie or two or three of your choice (I usually have carrots)
any spices you would prefer (salt and pepper tend to work nicely when all else fails)

cookware needed: foil and hot coals

Directions:
Form burger into a bowl with enough left over to create a "lid".
Slice or dice potato and veggie.
Fill burger with potato and veggie.
Flavor with any seasonings you prefer.
Place burger lid over filling and pinch the edges to "seal" the filling inside.
Wrap the ball of burger with foil.
Place foil covered burger on hot coals and let sit for up to 15 minutes before checking (depending on hotness of fire/coals and thickness of burger)
Toad will be done when the burger is cooked through.
Open "lid" and enjoy!


Dragon Eye ingredients:
Half a peach without the pit
Marshmallow
Chocolate bar (Hershey works best here)

cookware needed: foil and hot coals

Directions:
Turn half peach to mimic a bowl.
Slice marshmallow in half and place in peach where pit had been.
Place a chunk of the chocolate bar inside the sliced marshmallow.
Wrap all in foil, keeping "bowl" upright.
Place on hot coals.
Let sit for up to 10 minutes.
Dragon Eye is done when peach is soft and chocolate and marshmallow are melted giving you an "eyeball" staring back at you.
Enjoy the sticky gooey-ness!

My ten minute guacamale :D

2 decent size Avacados,

2 medium firm tomatoes

1 Spanish onion

half a lemon

sea salt

black pepper

**************

Scoop out contents of avacadoes

mix in bowl or blender until a soft creamy texture. set in fridge

cut tomatoes and take out seed center then chop into small pieces,

chop onion to similar sizes chunks. (Should be about 1/4" bits for both)

Take out avacado mixture, add tomato and onion, squeeze in lemon (you might need a full lemon depending on your taste), add sea salt and black pepper (cracked pepper is better) to taste and then serve with corn chips or you favorite salad.

Ummm, lets see, one of my favourite cakes, Carrot Cake

8 eggs
pound of flour
pound of sugar
pound of marg
mixed spices
almond essence
4 carrots
iciing sugar
Grate the carrots, put some to  one side to use as topping
mix the eggs, sugar, and marg in a bowl thoroughly, then add the flour, mix well and blend in the carrots and add the mixed spice, to your own taste.
Place in a greaseproof pan (this is a lot of sponge mix, you may wish to make individual cakes instead), place in oven on Gas Mark 4 and leave until cooked, you can test it with a  metal  rod, stick it in the middle, if it comes out clean, your sponge is cooked.
Wait till it is thoroughly cooled.
Topping
mix the iciing sugar and alittle marg till you get a nice creamy and thickish consistency, add the almond essence, (again this will depend on your taste) and mix. Spread it on the top of the sponge, when done,sprinkle the remaining carrot on top

And i forgot a few ingredients
Use one large iron frying pan to the back of the head of any interfering Russian
Drag body to prepared area out side
Throw in deep hole and add soil liberally
Sprinkle with seeds and wait for them to bloom into wonderful flowers
Enjoy:D
(You can actually use paving stones with the soil for a crustier topping)

1 large onion, quartered
1 (2-inch-long) piece fresh ginger, peeled
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 cup vegetable oil
1 1/2 teaspoons curry powder (preferably Madras)
1 to 2 fresh serrano chiles, halved lengthwise
1 cup water1 (14-oz)
 can unsweetened coconut milk (not low fat)
1 tablespoon fresh lime juice
1 lb large shrimp in shell (21 to 25 per lb)
Accompaniment: cooked basmati rice
Garnish: lime wedges



Pulse onion and ginger in a food processor until finely chopped. Cook onion mixture with salt and sugar in oil in a 12-inch heavy skillet over moderate heat, stirring frequently, until onion begins to brown, about 5 minutes. Stir in curry powder and chiles and cook, stirring frequently, 2 minutes. Stir in water, coconut milk, and lime juice and simmer, stirring occasionally, until thickened, 5 to 8 minutes.While sauce simmers, peel shrimp (devein if desired) and season with salt and pepper. Add shrimp to sauce and simmer, stirring occasionally, until shrimp are just cooked through, about 3 minutes. Add salt to taste and serve immediately

I'm not sure if this is viewed in the US, its just started here and yes another Cooking show, but at least these two gentlemen can give you a laugh.


Especially when you consider Tony is a Sikh and has a very strong Scots accent and wears a kilt.

Its shrimp and veggie curry its so good. You can substitute the shrimp with beef or chicken I think. I will watch them. I don'tthink they air in the states. Like bbc top gearvswitch to some assine american verison after a few years. I liked the orginal better. I love new foods to try XP

Well well well....hello to you you old serpent :P

Bisquick Beer Bread:

1/4 cup butter, softened
3 cups Original Bisquick™ mix (can use gluten-free Bisquick if necessary)
1/3 cup sugar
1 bottle or can (12 oz) light beer

1. Heat oven to 375°F. Grease bottom only of 9x5-inch loaf pan with 1 to 2 tablespoons of the butter (may also use cooking spray to grease the pan).
2. In large bowl, stir together Bisquick mix, sugar and beer with whisk until well blended. Pour into pan.
3. Bake 45 to 55 minutes or until golden brown.
4. In small microwavable bowl, microwave remaining 2 to 3 tablespoons butter on High until melted; brush
over warm loaf. Cool 15 minutes before slicing.

Forgotten Beef (or chicken or pork...called forgotten because you just dump it all into a crockpot and forget about it for the day):

approx. 2 lbs. of beef, chicken, or pork cut up into chunks
1 can of Campbell's Healthy Request cream of Mushroom Soup
1 can of Campbell's Healthy Request Cheddar Cheese Soup
1 envelope of Mrs. Dash's salt-free onion dip mix

Stir together all 4 ingredients into a suitably-sized crockpot (at least 3 quarts) and cook on low for 8 - 10 hours or on high for 4 - 5 hours.  Serve over mashed potatoes, rice, or egg noodles.

Both sound rather delicious on reading MG, I would though think about substituting the sugar for Stevia. For vegetarians I imagine you could use tofu in place of the meat?

I actually heard though that stevia can cause sterility  :S:S

As for the crockpot recipe it might be possible though I'm not sure how well tofu holds up under hours of slow-cooking

Turkey Recipe for Thanksgiving:

Ingredients

1 frozen turkey breast, NOT thawed bone-in (about 5 pounds) or boneless (about 3 pounds)
1 lb. can cranberry sauce
1 envelope dry onion soup mix

Prep Time: 5 minutes
Cook Time: 420 minutes
Total Time: 425 minutes
Yield: 6 servings

Preparation

For bone-in turkey, put all ingredients into 5-6 quart crockpot, cover, and cook for 2 hours on high. Then reduce heat to low and continue cooking for 4-5 hours until turkey registers 170 degrees F on instant meat thermometer. (Some sources now say that 165 degrees F is acceptable for a safe temperature).

For boneless turkey breast, follow instructions above. When you reduce the crockpot heat to low, start checking the turkey after 1-2 hours. It may only need that much time to reach 170 degrees F.

Slice turkey breast and serve with sauce.

CROCK POT BEER CHICKEN

2 lbs chicken breast
1 can beer
1 tsp. salt
1 tsp. garlic powder
1 tbsp. dried oregano
1/2 tsp. black pepper

Put chicken breast in slow cooker, add beer and seasonings, mix. Cook
on low in slow cooker for 6 to 7 hours...easy and good!

Amazing Meatballs

Ingredients

2 lb. frozen meatballs
2 bottles Heinz Chili sauce
2 C. grape jelly
1 C. brown sugar
1/2 C. French dressing

Directions

In large sauce pan, combine all the sauces until brown sugar and grape jelly are
completely melted. Pour over meatballs in large crockpot on high for 1-2 hours, then turn to
low until ready to eat. Or: cook on low for 4-5 hrs. Serve over rice or just eat alone.

All Day Apple Butter

Ingredients

5 1/2 lbs. apples, peeled, cored, and finely chopped
4 C. white sugar
2 tsp. ground cinnamon
1/4 tsp. ground cloves
1/4 tsp. salt

Directions

Place the apples in a slow cooker. In a medium bowl, mix the sugar, cinnamon, cloves, and
salt. Pour the mixture over the apples in the slow cooker and mix well. Cover and cook on
high 1 hour. Reduce heat to low and cook 9 to 11 hours, stirring occasionally, until the
mixture is thickened and dark brown. Uncover and continue cooking on low 1 hour. Stir
with a whisk, if desired, to increase smoothness. Spoon the mixture into sterile containers,
cover, and refrigerate or freeze.  Makes 4 pints.

Easy Apricot Chicken

Serving Size / Yield
6 servings

Ingredients

6 boneless, skinless chicken breast halves
one 12-oz. jar apricot preserves
one 8-oz. bottle Catalina dressing
one 1-oz. pkg. dry onion soup mix

Directions

Place chicken in a 6-quart slow cooker sprayed with vegetable cooking spray. Combine
apricot preserves, Catalina dressing, onion soup mix, and 1/4 cup water. Stir well. Cover
chicken breast with mixture. Cover and cook on low for 5-6 hours.

Bacon and Cheese Dip

Ingredients

16 slices bacon, diced, fried and drained
2 8 oz. pkg. cream cheese, softened and cubed
4 C. shredded cheddar cheese
1 C. Half & Half
2 tsp. Worcestershire sauce
1 tsp. dried minced onion
1/2 tsp. dry mustard
1/2 tsp. salt
Dash hot sauce

Directions

Put all ingredients in the crock pot and cook on low, stirring occasionally until cheese melts,
about 1 hour. Taste and adjust seasonings, add bacon, and keep on low to serve. Serve
with cubed or sliced French bread.

Crab dip

2TBL unsalted butter
2 medium shallots,minced
1 TBL water
1/4 tsp Cayenne pepper
3/4 tsp Old bay seasoning
1 1/4 tsp dry mustard
3/4 cup half and half
8 oz. cream cheese cut into small pieces
4 oz sharp white cheddar, grated on large holes on box grater to aprox 1 3/4 cups
3 tbl fresh lemon juice
2 tsp worcesterhire
12-16 oz lump crabmeat, picked and cleaned
1/4 cup chopped fresh flat leaf parsley
1/2 tsp paprika


Pre measure and prepare all ingredients into containers prior to beginning to cook
Preheat oven to 400 F
Melt butter in a large saute pan
Add water and simmer for 30 seconds
Stir in Cayenne, Old bay and dry mustard
pour in the half and half and bring to a simmer
whisk in cream cheese until its melted
stir for 2 minutes until mostly smooth
remove from the heat
Add lemon juice and worcestershire and stir
add the crab meat and parsley Stir gently to not break up the crab
sprinkle with paprika
transfer to oven safe dish and bake 18 to 22 minutes unbtil dish is hot and bubbly

Then get some crackers or your favorite bread and nom nom nom  :D

Slow-cooker banana pudding:

Ingredients:

2 cans condensed milk
4 bananas

Instructions:

Combine condensed milk and bananas in blender and pour into crockpot and cook on low for 2 - 3 hours or on high for 1 - 2 hours.

Super-Duper Balsamic Chicken Recipe

Time needed
10 min preparation + 4 hour cooking

Serving Size / Yield
6 servings

Ingredients

4 - 6 boneless, skinless, chicken breasts
2 14.5 oz. cans diced tomatoes, undrained
1 onion, thinly sliced (not chopped)
4 garlic cloves, minced
1/2 C.balsamic vinegar
2 Tbs. olive oil
1 tsp. basil
1 tsp. rosemary
1 tsp. oregano
1/2 tsp. thyme
ground black pepper and salt to taste

Directions

Pour the olive oil on bottom of crock pot place in chicken breasts, salt and pepper each
breast put sliced onion on top of chicken then put in all the dried herbs and garlic cloves
pour in vinegar and top with tomatoes Cook on high 4 hours, serve over angel hair pasta

Slow Cooker Beef Barley Soup

Ingredients

1 1/2 pounds boneless lean beef, cubed
3 Tbs. vegetable oil
1 tsp. salt
1 tsp. ground black pepper
2 tsp. garlic powder
3 (10.5-oz.) cans beef broth
6 C. water
4 stalks celery, chopped
6 carrots, chopped
6 green onions, chopped
1/2 C. chopped fresh parsley
1 C. barley
1 tsp. dried thyme

Directions

In a skillet over medium heat, sauté the beef in the oil for 5 minutes, or until browned. Stir
in the salt, pepper, and garlic powder and place seasoned meat in a slow cooker. Add a
little water to the skillet and stir to pick up the browned bits. Add to the slow cooker. Add
the broth, water, celery, carrots, green onions, parsley, and barley. Cover and cook on low
setting for 6 to 8 hours, or until the vegetables and barley are tender. Add the thyme just
before serving.  Makes 10 to 12 servings.

Cheesy Garlicky Chicken (crockpot)

Ingredients

6 to 8 boneless skinless chicken breasts
2 cans cream of chicken soup
1 can Cheddar cheese soup
Several dashes of garlic powder

Directions

Place chicken breasts in crockpot. Mix the soups and garlic powder together. Pour over the
top of the chicken. Cook on low for about 8 hours.

Chicken Tikka Masala {Crockpot}
Yield: 6-8 servings | Prep Time: 15 minutes | Cook Time: 8 hours

INGREDIENTS:

8 boneless, skinless chicken tenderloins, or about 5 boneless, skinless chicken breasts
(about 3 lbs.)
1 large onion, diced
4 cloves of garlic, minced
2 tbsp. fresh ginger, minced
1 (29 oz.) can of tomato puree
1 1/2 cups plain yogurt
2 tbsp. olive oil
2 tbsp. Garam masala
1 tbsp. cumin
1/2 tbsp. paprika
2 tsp. salt, or to taste
3/4 tsp. cinnamon
3/4 tsp. fresh ground black pepper
1-3 tsp. cayenne pepper (depending on your heat preference)
2 bay leaves
1 cup heavy cream
3 tbsp. cornstarch
Chopped parsley or cilantro, for topping

INSTRUCTIONS:

Place everything up to the bay leaves in a large bowl. With a spatula, stir to combine
everything and make sure the chicken is coated well. Gently place the mixture in the insert of the crockpot and add the two bay leaves.
Cover and cook for 8 hours on low (or 4 hours on high).
When done, in a medium bowl, whisk together heavy cream and corn starch, then pour
the mixture into the crockpot and gently stir. Let cook an additional 20 minutes to
thicken up.
Serve hot over a bed of white (or brown) rice.
Store leftovers in an airtight container in the fridge for up to 5 days.

Slow Cooker Chicken & Gravy

Ingredients

2 pounds of boneless, skinless chicken breast
1 jar (12 oz) chicken gravy
1 can (10.5 oz) cream of chicken soup
Salt & Pepper to taste

Instructions
1. Spray slow cooker with non stick cooking spray
2. Add in chicken
3. Mix gravy and soup together and pour over chicken
4. Add salt/pepper to your taste
5. Cook on low for 8 hours
6. Server over noodles or with mashed potatoes

Crock Pot Green Chile Chicken Recipe

Ingredients

4 Chicken Breasts
8 oz of Green Chiles Diced - The mild version has almost no heat so perfect for
kids
1 tsp of Garlic Salt
Pepper ( optional)
Cooked Rice ( Optional )

Instructions

1. Set crock pot to low

Slow-cooker Middle-Eastern Garlic Chicken

Ingredients

6 boneless, skinless chicken breasts (2-1/2 lbs)
4 cloves garlic, sliced, plus 4 cloves mashed (or garlic paste from a jar)
1 tsp kosher salt
1/2 tsp pepper
1/2 tsp ground allspice
1 Tbsp lemon zest
Juice of 1 lemon
3 Tbsp olive oil

Directions

Trim the chicken breasts, and pat dry with paper towels. Place in a bowl with remaining ingredients, and mix well.
Marinate, covered or in a zip-loc bag, in the refrigerator for 4-5 hours, or overnight.
Place chicken and all of the marinade in a 3- or 4-quart slow cooker.
Cook on HIGH for 2-1/2 hours (or on LOW for 5 hours), until the chicken breaks apart easily. (If you're home, stir the
chicken once or twice during the cooking time.) Remove the chicken from the cooker; use two forks to shred it, and return
the shredded chicken to the cooker. Stir to combine with the liquid. Cover, and continue cooking on HIGH for 15 minutes.
Turn the cooker off and let the chicken sit, covered, for 15 minutes, stirring once or twice; it will continue to absorb any
excess liquid in the cooker.
Pour the chicken and any liquid into a container. Cover and cool at room temperature. Serve the chicken with pita bread,
chopped lettuce and tomato, and your favorite buttermilk ranch-style salad dressing.
Refrigerate leftover chicken for several days, or freeze.

Ingredients

2 (one 16 oz and one 12 oz) frozen corn, thawed
1 (8 oz) cream cheese, cubed
3/4 c. shredded cheddar cheese
1/4 c. butter, melted
1/2 c. heavy whipping cream
1/2 tsp salt
1/4 tsp pepper

Instructions

In a 4 qt slow cooker combine all ingredients. Stir to combine.
Cook, covered, on low 3-4 hours or until warmed through and cheese is melted. Stir just before

Cheesy Chickenetti

Ingredients

1 C. chicken broth
1 16-oz. pkg. spaghetti, cooked according to package directions
4-6 C. cooked chicken breast, diced
1 10 3/4-oz. can cream of mushroom soup (can substitute with cream of chicken or
celery soup)
1 C. water
1/4 C. green bell pepper, diced
1/2 C. celery, diced
1 med. onion, finely chopped
1/2 lb. white or yellow American cheese, cubed
1/2 tsp. black pepper

Directions

Pour 1 cup of chicken broth into a large slow cooker. Add cooked spaghetti and diced
chicken. In a large bowl, stir the soup and water together until smooth. Stir in remaining
ingredients then pour all into the slow cooker. Cover. Cook on Low for 2-3 hours.

Variation: Zest it up with a 4-1/2 oz. can chopped green chilies.

Ingredients

1 3/4 C. water
1 (14 oz.) can chicken broth
1/2 lb. boneless chicken, cut in pieces
1/2 tsp. chili powder
1 (11 oz.) can corn w/ peppers drained
1 C. salsa
3 C. tortilla chips
2 oz. Monterey cheese w/ peppers shredded

Directions

Add all of the ingredients except cheese and chips to crockpot and cook for about 6 hours.
When finished, fill the bowls and put the chips and cheese on top.

Ingredients

1 package (3 ounces) berry blue gelatin
1 package (3 ounces) strawberry gelatin
2 cups boiling water
1 cup cold water
2 cups cold milk
2 packages (3.4 ounces each) instant vanilla pudding mix
1 carton (8 ounces) frozen whipped topping, thawed, divided
1 pint fresh blueberries
1 quart fresh strawberries, quartered
1 prepared angel food cake (8 to 10 ounces), cut into 1-inch cubes

Directions

1.In two small bowls, combine each gelatin flavor with 1 cup boiling water. Stir 1/2 cup cold water
into each. Pour each into an ungreased 9-in. square pan. Refrigerate for 1 hour or until set.
2.In a large bowl, whisk milk and pudding mixes for 2 minutes. Let stand for 2 minutes or until
soft-set. Fold in 2 cups whipped topping.
3.Set aside 1/4 cup blueberries and 1/2 cup strawberries for garnish. Cut the gelatin into 1-in.

1 container (8 ounces) frozen whipped topping, thawed
Additional blueberries and raspberries, optional

Directions

In another bowl, toss blueberries and raspberries with lemon juice.
2. In a greased 9-in. springform pan, layer half of each of the following: cake cubes, berry mixture

Creamy Chicken Stew

Ingredients

1 lb. leftover cooked chicken, diced
6 lg. Yukon potatoes, peeled and diced
1 bag fresh baby carrots, halved
1 lg. onion, diced
2 celery stalks, diced
3 C. water
1 chicken boullion cube
1 can cream of mushroom soup (cream of chicken or celery would work too)

Directions

Place diced potatoes, carrots, onion and celery in a crockpot. Mix 3 cups of water with
chicken boullion cube and add to crockpot. Cook on high for approximately 3-4 hours. With
a ladle, remove approx. 1-1/2 cups of chicken broth (you can always save this broth for
another dish or lunch!) Add can of soup and the diced chicken. Stir well and cook for
another 30 minutes. You can keep this simmering on low until ready to serve.
This meal easily fed my family of 6 with leftovers.

in certain things I've managed to substitute the fat in a recipe with an equal amount of plain fat-free Greek yogurt which seems to work fairly well for most things..maybe not quite as well as oil or butter but well enough....the technique does seem to make for rather delicious cakes though....at least the ones from a mix :D

Crock Pot Chicken Tortilla Soup

Ingredients

1-2 lb. cooked chicken tenders
2-3 large potatoes
2 cans cream of chicken soup
1 can chicken broth
1/2 C. onion
1 tsp. chili powder
1 small can green chillies
Fresh cilantro, to taste (optional)
3 flour tortillas

Directions

Cut cooked chicken tenders and potatoes into cubes. hop onion into bite-size pieces.
Place all ingredients except tortillas into a crock pot and cook on medium heat for 5-6
hours. Cut flour tortillas into small strips. Fry in batches in deep fat until slightly golden
brown.  Ladle soup into bowls. Top with fried tortillas and grated cheese.

Chinese Orange Chicken (Another Easy Family Meal)

Ingredients

20 Tyson Batter Dipped Chicken Tenders
3 tbsp vegetable oil
1 tablespoon ginger root, minced
1 teaspoon garlic, minced
1/2 teaspoon crushed red pepper flakes
4 tablespoons rice vinegar
1 1/4 cup water
1/2 cup orange juice
1 1/2 tablespoons soy sauce
1/4 cup chopped green onion {scallions}
1/2 cup light brown sugar
2 tbsp orange zest (or 1 tbsp of orange extract)
1/8 cup warm water
2 tbsp corn starch

Instructions

1. Cook the Tyson Battered Chicken Strips according to package directions.
2. Allow to cool and chop into bite siz ed pieces, about 1 inch, and set aside in a medium bowl.
3. Add vegetable oil to a skillet over medium-high heat.
4. Add ginger and garlic and stir for about 30 seconds.
5. Add rice vinegar, red pepper flakes and green onions and stir for another 30 seconds.
6. Add 1 1/4 cup water and the orange juice and bring to a low boil, about 2 minutes.
7. Add the brown sugar and orange zest and stir until dissolved and reduce the heat to low.
8. In a separate small bowl, add 1/8 cup warm water and the cornstarch and stir until smooth then add to the orange sauce in the
skillet.
9. Allow to simmer stirring occasionally until the sauce is thickened, about 10 minutes.
10. Remove the sauce from the heat.
11. When ready to serve, pour the orange sauce over the chicken and stir to coat.
12. Serve immediately over jasmine rice or alternately over broccoli or a vegetable of choice.

Slow Cooker Coconut Chicken Curry 1

Prep Time 15 mins
Cook Time 6 hrs
Servings 5

2 pounds, 3-⅓ ounces, weight Boneless Skinless Chicken Breast, Cut Into Large Cubes
1 whole Onion, Peeled And Halved
2 cloves Garlic, Peeled
1 whole Small Green Bell Pepper, Seeded And Quartered
1 can (156ml Can) Tomato Paste
1 can (about 400ml Can) Coconut Milk
1-½ teaspoon Salt
1 Tablespoon Curry Powder
1 Tablespoon Garam Masala (Indian Spice Mix)
2 whole Dry Red Chili Peppers (optional For Extra Heat))
2 Tablespoons Water
1-½ Tablespoon Cornstarch
1 bunch Coriander (optional, For Decoration)

1. Place chicken cubes inside the slow cooker.
2. Place the rest of the ingredients (except chili peppers, cornstarch, water and coriander) in a food processor bowl and process together
until the mix is smooth(ish). Pour sauce mix on top of the chicken, mix well, add hot peppers if using any, then close the lid. Cook on low
for 6 hours.
3. An hour before serving, mix together water and cornstarch until the cornstarch is completely dissolved. Add to the chicken curry and
mix well. Place the lid back on for the rest of the cooking time.
4. Serve on top of steaming white rice, something wonderfully aromatic like jasmine or basmati rice. Decorate with lots of chopped
coriander. Inhale. So good!

Cilantro Lime Green Sauce:

1/2 cup plain fat-free Greek yogurt
1/2 cup light mayo (Trader Joe's has a good red. fat mayo that also happens to be eggless...and therefore vegan...and also no added sugar)
1/4 cup fresh cilantro, coarsely chopped (or 1 tbsp. dried cilantro)
2 fresh garlic cloves
1 jalapeño pepper, coarsely chopped
1 tbsp. fresh lime juice (store-bought will do in a pinch, or 1 tbsp. of water + 2 TrueLime crystallized lime packets)

Put all ingredients in blender or food processor and puree until smooth.  This is a good multi-purpose sauce that goes well with chicken, pork, seafood, vegetables, or rice.  It might even work as a garnish for a bowl of chili.  This recipe came off the container of Target-brand "Simply Balanced" plain fat-free Greek yogurt.

5 cup water
whipped cream, optional
ground nutmeg, optional
Instructions

In a large slow cooker, add sweetened condensed milk, cocoa powder, vanilla, rum flavoring,
cinnamon and kosher salt. Whisk together. Add egg nog and water, stirring until combined. Heat

Ghirardelli is a good brand and works well with this recipe)
• 1/2 cup coconut milk, (canned, not in a carton)
• 1/4 cup coconut sugar, optional honey or maple syrup
• Dash of sea salt
• 2 tablespoons coconut oil
• 1 teaspoon pure vanilla extract

Directions

Fudge is perfect for the slow cooker because it doesn't scorch or burn.
Add chocolate chips, coconut milk, coconut sugar, salt, and coconut oil, stir to combine. Next, cover
and cook on low 2 hours without stirring. It's important that lid remain on during the 2 hours.
After 2 hours, turn the slow cooker off, uncover, and add vanilla. IMPORTANT; Do not stir fudge
mixture at this point. Allow to cool to room temperature, or it reaches 110 degrees with a candy
thermometer.
Once cooled, use a large spoon, stir vigorously for 5-10 minutes until it loses some the gloss.
Lightly oil an 8"x8" square pan. Pour fudge into pan, cover and refrigerate 4 hours or until firm. This
fudge is very rich and meant to be eaten on occasion as a treat.
Note: Canned coconut milk can be found in the Asian or organic sections of most grocery stores.

Greek pulled pork

Serving Size / Yield
4 servings

Ingredients

1 (2 lb.) pork tenderloin
2 Tbs. Greek seasoning
1 (16-oz.) jar pep eroncini peppers

Directions

Place tende rloin into slow cooker, sprinkle meat gene rously with Gree k seasoning and
pour jar of pep pers (with juice) over the pork. Cook for 4 hour s on high setting.
After 4 hours. shred the pork using two forks and allow to cook 10 to 15 more minutes.
Serve.

Greek Stew (crockpot)

Ingredients

3 lbs. of stewing beef
1 1/2 lbs. small onions (about 7)
3 cloves garlic, minced
1 (28 oz.) can tomatoes
1/2 C. beef stock
1 (5 1/2 oz.) can tomato paste
2 Tbs. red wine vinegar
2 tsp dried oregano
1/2 tsp. each salt & pepper
1/2 C. all purpose flour
1/2 C. cold water
1 sweet green pepper, chopped
1/2 C. crumbled feta cheese
2 Tbs. chopped fresh parsley

Directions

Cut beef into 1 inch cubes, trimming off any fat. Cut onions into wedges leaving root end
intact. Put meat & onions into slow cooker along with garlic & tomatoes. Combine beef
stock, vinegar, oregano, salt & pepper and add to slow cooker, stirring gently to blend.
Cook on low for 8-9 hrs or High for 6 hrs. Add flour & water mixture and chopped green
pepper. Cook on high for 15 min. or until thickened. Serve sprinkled with feta & parsley.

Honey Ginger Chicken

Ingredients

4-8 Chicken breasts
4 Tbs. Chopped Onion
1 1/2 Tbs. Honey
1 Tbs. Soy Sauce
1 Tbs. Minced Ginger
2 Tbs. Sherry
1/4 C. Chives

Directions

To cook the chicken, thaw completely in the fridge, dump into 9x12" pan, bake at 350 until
done. For breasts, it is about 25-35 minutes. For chicken pieces, it runs closer to an hour.
Enjoy! You can also use your crock pot for this too!

Slow Cooker Hoppin' John

Yield: Serves 6
Cook time: 5 Hours, 30 Minutes
Prep time: 5 Minutes

4 strips thick-cut bacon, diced
1 small onion
1/2 teaspoon crushed red pepper
1 cup dried black-eyed peas, rinsed and picked over
1 15-oz. can diced tomatoes, drained
1 1/2 cups long-grain rice
1 teaspoon salt

Ingredients

Preparation

1. Place bacon in a saucepan and cook over medium heat until just beginning to crisp. Add onion and cook, stirring, until softened,
about 5 minutes. Scrape bacon, bacon fat and onion into slow cooker. Add crushed red pepper, peas and 4 cups water and stir to
combine. Cover and cook on low until peas are nearly tender, 3 to 4 hours.
2. Stir in tomatoes, rice and salt. Cover and continue to cook just until rice is tender and has absorbed all liquid, 1 to 1 1/2 hours. Fluff
with a fork and serve.

Note:

Go whole grain. Swap in brown rice instead of white to add fiber and other nutrients to this already healthful dish.
Turn up the heat. Like a kick? Use more crushed red pepper and sprinkle the dish with hot sauce just before serving (or pass the
sauce at the table).

Indulgent Chicken

Ingredients

one 2.5-oz. jar dried beef
6 sm. boneless, skinless chicken breast halves
6 slices bacon
two 10-oz. cans golden mushroom soup (I used Healthy Request Cream of Mushroom

Directions

Line bottom of a slow cooker with slices of dried beef and overlap some. Roll each chicken
breast with a slice of bacon and secure with a toothpick. Place in a slow cooker without
overlapping. Combine mushroom soup and 1/2 cup water. Spoon over chicken breasts.
Cover and cook on low for 6-8 hours.

Strawberry Jam without sugar

1 lb   Strawberries
3/4 cup   Water
1 (1.75 oz) Pectin
1 cup   Baking stevia
Optional:    1/2 tbs lemon juice



Wash and dry the strawberries, and remove the stems. Mash the strawberries in a large bowl (to desired smoothness, or blend if really smooth is desired). In a small saucepan, bring the water and pectin to a boil and boil for 1 minute. Add the mashed strawberries and stir for 1 minute. Turn off heat and stir in sweetener. Ladle the jam into container and let cool to room temp. Cover and place in the refrigerator overnight to let it set. Store in the freezer if desired or up to 1 year, in the fridge for 3 weeks.

Ziti Ratatouille:

1 large eggplant, peeled and cut into 1/2-inch cubes
2 medium zucchini, cut into 1/2-inch cubes (doesn't have to be peeled)
1 green or red bell pepper, seeded and chopped
1 large yellow onion, chopped
4 cloves of garlic, minced
1 jar (about 24 oz.) marinara sauce
2 cans (about 14 - 15 ounces each) Italian-style diced tomatoes, undrained
1 small can pitted and chopped black olives (about 4 - 6 oz.), drained
8 ounces ziti noodles

Combine eggplant, zucchini, bell pepper, onion, garlic, marinara sauce, and tomatoes w/ juice in slow-cooker of suitable size (I'd say about 4 quarts).  cover and cook on low for 4 1/2 hours.  Stir in olives and pasta and cook about 25 minutes more or until pasta is tender.  Drizzle with lemon juice and sprinkle with parmesan cheese of desired.

Mom's Italian Beef Barley Soup

Servings: 6

INGREDIENTS:

2 pounds cubed beef chuck roast
5 cups water
4 cubes beef bouillon, crumbled
1/2 onion, chopped
1 (8 ounce) can tomato sauce
3/4 cup uncooked pearl barley
salt and pepper to taste

DIRECTIONS:

1. In a slow cooker, combine beef, water, bouillon, onion,
tomato sauce, barley, salt and pepper.

Ingredients

2 lbs boneless chicken breasts
1 t dried oregano
1/2 t Lawry's Seasoning Salt
1/4 t ground pepper

1 t dried parsley
3 T lemon juice
1/2 cup chicken broth

Instructions

Another vegetarian favorite:  good ol' mac & cheese....slow-cooked :D

Crock Pot Mac & Cheese

Ingredients

2 c. uncooked elbow macaroni
4 Tbsp butter (can sub in another 1/4 cup of plain fat-free Greek yogurt for the butter, or it can be whole milk Greek yogurt, which would still have far less fat than butter)
2 1/2 c. grated sharp cheddar cheese
1/2 c. sour cream (can use plain fat-free Greek yogurt)
1 (10.75 oz) can condensed cheddar cheese soup (this comes in a Healthy Request version)
1/2 tsp salt
1 c. milk
1/2 tsp dry mustard
1/2 tsp black pepper

Instructions

1. Spray Crock Pot with non-stick cooking spray.
2. Boil the macaroni in water for six minutes, drain. You don't want to overcook this!
3. Mix butter and cheese soup over medium high heat in a saucepan. Add cheese and stir until it melts.
4. In your Crock Pot combine the cheese mixture, sour cream, soup, salt, milk, mustard and
pepper. Add drained macaroni. Give it a big old stir.
5. Cook in Crock Pot for 2 - 2 1/2 hours on low, stirring occasionally. Just until it's hot. If you let it
cook to long the noodles will turn to mush!

Alternative to mashed potatoes for those looking to cut back on carbs:

Mashed Cauliflower:

Makes 4-6 servings

1 head of cauliflower
3 cups water
4 large garlic cloves, peeled
1 tsp salt
1 bay leaf
1 Tbsp butter
Milk (if needed)
Salt and Pepper

1.  Cut the cauliflower into florets and place in the slow cooker.
2.  Add in the water, garlic cloves, salt and bay leaf.
3.  Cover and cook on HIGH for 2-3 hours or on LOW for 4-6 hours.
4.  Remove the garlic cloves and bay leaf.  Drain the water.
5.  Add in the butter and let it melt. 
6.  Use a potato masher to mash the cauliflower or if you want to use an immersion blender to make it more creamy you can do that.  If it needs milk add it in a tablespoon at a time.
7.  Salt and pepper to taste.  Serve with chives or green onions.

Crockpot Mashed Potatoes (for those who prefer to indulge in carbs on Thanksgiving LOL)

INGREDIENTS

5 pounds of potatoes, peeled and diced 1″ cubes
I used a combination of Yukon gold and Russet
Chicken stock, 1.5 cups
Butter, 2 Tablespoons
Fresh garlic, 2 cloves, minced
Sour cream, 1.5 cups
Optional – parmesan cheese, chives, cheese and more butter!

HOW TO PREPARE

1.) Peel your potatoes and dice them into 1 – 2″ inch pieces
2.) Toss potatoes into slow cooker
3.) Pour chicken stock over potatoes. Add butter and garlic to the slow cooker with the potatoes.
4.) Cook on low for 8 hours
5.) When potatoes have softened, toss in sour cream and mash with a potato masher in the crockpot until
the consistency you’d like. (If I had fresh parmesan cheese I would have shredded this and added it at this
time to mix in.)
6.) Turn to warm and serve from the crockpot! Top with your favorite gravy or toppings.

I'm up to more than 12 qts of grape juice (with plenty more grapes in the freezer to process!) and just made my first 4 pints of grape jelly! I have not tried the jelly yet - I don't eat that much of it to begin with - but it seems a little watery still. It gelled but not as much as I think it should have.  :fp  But I don't think I did too bad for my first time canning jelly!

While making chili for the potluck at work tomorrow (yeah, I know chili isn't Thanksgiving food. As Cam Mitchell said, "That right there, that's quitter talk", because anything can be Thanksgiving food if you try hard enough), I was cooking up the meat, first just mixing shredded cheese and diced green peppers into the mass of ground beef that I just chopped up while cooking, but then I hit on an idea that will warrant further idea by making patties stuffed with cheese and peppers.

As far as the chili itself, I don't have much special to it. I use Carroll Shelby's Chili Mix Kit (yes, the same Carroll Shelby of automotive fame), throw in diced peppers, diced tomatoes, pinto beans, and then a mix of ground beef and spicy ground sausage. I try not to go super spicy because I feel that there's a certain point where you can overpower everything else setting your mouth on fire. There should be some bite to it, but you should still be able to taste everything else.
